2 teaspoons olive oil
4 cloves garlic, coarsely chopped
4 whole small trout (about ¾ pound each), cleaned, head and tail intact if desired, rinsed and patted dry
1 sprig fresh rosemary or ½ teaspoon dried
2 teaspoons minced fresh parsley
Salt and freshly ground pepper to taste
Juice of 1 large lemon
Lemon wedges and parsley sprigs for garnish
1. Heat 1 teaspoon oil in large nonstick skillet over medium-low heat and sauté garlic, stirring often, for about 3 minutes. Do not brown.
2. Add remaining teaspoon oil, trout, rosemary, and minced parsley to skillet. Raise heat to medium and brown fish on both sides. Season with salt and pepper to taste.
3. When fish is browned, add lemon juice and cover skillet lightly. Lower heat and cook for 10-15 minutes or until fish is just cooked through. Garnish with lemon wedges and parsley sprigs and serve immediately.
